Have you heard of a restaurant called Bobcat Bonnie's?
Bobcat Bonnie's opened its first location in 2015 in Corktown, Detroit. Since then, owner Matt Buskard has opened seven other locations across Michigan and Ohio. Soon, it'll be eight, because Lansing is the city where the next location is opening.
Bobcat Bonnie's will be taking over the old Clara's Lansing Station Restaurant located at 637 E Michigan Avenue.

Bobcat Bonnie's will be joining Starbucks, which is already located in the western part of the building.
The inside, which is almost finished, will be a combination of the past and present. They wanted to do their best to preserve the history of Clara's, which had been around for over 30 years, while also bringing in some newness. You can see some sneak peek photos here.

According to Buskard, they hope to be open before the end of January.
Honestly, I cannot wait for Bobcat Bonnie's to open so that I can give them a try. The menu is absolutely drool worthy. And oh my goodness, talk about yummy options for a boozy brunch.
